Demonstration Class – Smoke! | Big Green Egg | 6:30 pm – 8:30 pm

Cooking slowly over low heat infused with wood smoke is what smoking – and what some call “real barbecue” – is all about. In this class Chef Phillip will demonstrate several different ways to smoke your favorite dishes, and introduce you to some new ideas! Each dish will be served by course as the chef demos, and recipes packs are included.

Join us at 101 Steak as we explore red wines and how to pair them. Beverage Director Chris Reid will lead diners through a six course pairing titled “Beauty to the Beast” as wines will increase in intensity. Each wine has been expertly paired with bites from Executive Chef Joey Ahn. Seating for this event is limited, so purchase tickets soon!

Whole Hog Class | Pine Street Market | 10:00 am – 1:00 pm

Get to know cuts of pork from the inside-out. During this interactive demonstration, Rusty & friends break down a whole pig while explaining various cuts of meat and the nuances of butchery. Participants slice their own pork chops and create two pounds of signature bacon! This class runs from 10 – 1 and includes a lunch of slow roasted pork shoulder, Southern vegetables and beverages. “Whole Hog” attendees will take home their own pork chop and bacon. Due to the curing process, bacon is available for in-store pick up the following Saturday. $125/ Person. Classes are held at Pine Street Market. Refunds are not available for missed classes.

You will meet beautiful dairy cows, learn about the creamline milk process from cow to bottle, and sample milk and Rock House Creamery’s delicious cheese curds! Following the dairy fun, you’ll visit the extensive vegetable gardens adjacent to the creamery, learning about the many aspects of the garden: what’s grown, who works there, and the diverse career paths that lead to agricultural work.
